Prue Leith’s herby, garlicky lamb chops

Renowned chef and television personality Prue Leith recently shared a mouth-watering recipe for herby, garlicky lamb chops, inspired by Middle-Eastern flavours. In this bold and flavourful dish, Leith incorporates a Lebanese condiment called toum, which is similar to aioli but uses garlic to stabilize the sauce instead of egg yolk, resulting in a very garlicky taste that is bound to impress your taste buds.

To recreate this Middle-Eastern delight at home, you will need some lamb chops, olive oil, salt, black pepper, a garlic bulb, vegetable oil, lemon juice, flat-leaf parsley, mint leaves, red onion, tomatoes, cucumber, and olive oil. The recipe serves four people and is perfect for a special autumn meal.

To prepare the toum, blend the garlic and salt until it forms a paste, then slowly add the vegetable oil while blending until the mixture thickens and emulsifies. Finish by stirring in lemon juice and seasoning with salt and pepper. Next, heat the grill to medium-high, arrange the lamb chops on a lined tray, brush them with olive oil, season with salt and pepper, and grill for a few minutes on each side until cooked to medium.

While the lamb chops are resting, prepare the herb salad by mixing parsley, mint, red onion, tomatoes, and cucumber with olive oil, salt, and pepper. To serve, plate the grilled lamb chops and spoon some toum over the top. Accompany the dish with the herb salad for a fresh and vibrant contrast in flavours.

This recipe is taken from Prue Leith’s cookbook titled ‘Life’s Too Short To Stuff A Mushroom’, showcasing her expertise and creativity in the kitchen. Embrace the bold and aromatic essence of Middle-Eastern cuisine with these herby, garlicky lamb chops that are sure to elevate your dining experience.
