A recent study has unveiled a revolutionary method for boiling eggs that challenges the traditional approach, advocating for a longer cooking time to achieve superior results. The groundbreaking technique promises a creamier yolk, a firmer white, and potential nutritional enhancements, presenting a novel way to prepare this breakfast staple. Conducted by Emilia Di Lorenzo, a co-author from the University of Naples Federico II, the study recommends a meticulous process involving the transfer of eggs between two vessels – one containing boiling water at 100°C and the other at 30°C – every two minutes over a duration of 32 minutes.
According to Di Lorenzo, the key distinction lies in the yolk’s texture, contrasting the conventional soft-boiled method with the periodic method. She elaborates on the difference, stating that while a traditional soft-boiled egg’s yolk is cooked gradually from 20°C to 72-80°C over six minutes, resulting in a runny centre and a denser border, the periodic method maintains a consistent temperature of 65-67°C throughout 32 minutes. This meticulous process ensures a uniform texture throughout the yolk, devoid of any runniness.
Despite the potential benefits of this innovative approach, Di Lorenzo acknowledges the challenges it poses in a fast-paced modern lifestyle, where time constraints may deter individuals from adopting this method routinely. Moreover, chemical analysis revealed that periodically cooked egg yolks contain polyphenols, micronutrients known for their antioxidant and anti-inflammatory properties, offering an additional health incentive for those willing to explore alternative cooking techniques.
