Eating ultra-processed food may cause fat build up in surprising body part

A recent study conducted by the University of California has suggested a link between consuming ultra-processed foods and an accumulation of fat in the thighs. The research, which involved 666 participants, found that diets high in ultra-processed foods (UPFs) may impact muscle quality and increase thigh muscle fat, potentially raising the risk of developing osteoarthritis in the knee. Zehra Akkaya, the study’s author, highlighted the significance of the findings, noting that this study is the first to explore the relationship between ultra-processed foods and intramuscular fat in the thigh muscles using MRI imaging. The results indicated that even in adults at risk for osteoarthritis, consuming ultra-processed foods was associated with increased fat in the thigh muscles, irrespective of other factors such as energy intake, BMI, demographics, or physical activity levels.

There are two main types of fat in the human body: subcutaneous fat, found just under the skin, and visceral fat, surrounding internal organs. As people age, it’s common to accumulate more belly fat due to hormonal changes, leading to a shift in how fat is stored in the body. Dr. Zehra further expressed concerns about the risks of a diet rich in ultra-processed foods, highlighting a previous study linking UPFs to faster ageing due to their nutritional inadequacy and high levels of sugars, salt, and unhealthy fats. These processed foods undergo intense industrial processing, resulting in nutrient loss and altered food matrices, potentially impacting glucose metabolism, gut microbiota, and introducing toxic substances through plastic packaging.

While studies suggest links between ultra-processed foods and various health risks, including osteoarthritis, faster ageing, and potential long-term health conditions, experts advise moderation rather than panic. Despite reports indicating an increased risk of developing serious health conditions from UPF consumption, Professor Gunter Kuhnle of the University of Reading challenges the categorization of all ultra-processed foods, noting variations and suggesting a focus on overall food composition rather than processing levels. Advocating for a diet rich in fresh, minimally processed foods, he emphasizes the importance of considering sugar, fat, and salt content over solely the processing aspect.

As awareness grows regarding the impact of ultra-processed foods on health, the balance between convenience and nutritional value becomes a crucial aspect to consider. Making informed choices about food consumption and being mindful of ingredients can potentially lead to better health outcomes in the long run. It’s essential to take a holistic approach to dietary habits, focusing on the quality of food consumed to support overall well-being and mitigate potential health risks associated with heavily processed foods.
