This roast chicken recipe uses an actual brick to cook the meat

A new and unique roast chicken recipe has emerged, with a twist that involves using an actual brick to cook the meat. The recipe, shared by MasterChef judge John Torode, promises a delicious and straightforward crowd-pleaser that requires just six ingredients.

According to Torode, the use of a brick is not mandatory, as any heavy weight will suffice. The purpose of the brick is to keep the chicken flat while cooking, ensuring that the skin stays crispy. Torode suggests that using a brick adds an interesting story to share around the family table, making the meal even more special.

The recipe for Brick Roast Chicken and Braised Chipotle Cabbage serves 4-6 and includes the following ingredients:
– 1 whole chicken (2-2.5kg)
– Juice of 2 limes
– 100g chipotle paste
– Olive oil for cooking
For the chipotle cabbage:
– Oil for frying
– 1 hispi cabbage, cut into 8 wedges
– 1 tsp chipotle paste
– 200-300ml water
Optional serving suggestions:
– Oven fries
– Mayonnaise

To prepare the dish, the chicken is spatchcocked, marinated in lime juice and chipotle paste, and then cooked in an ovenproof frying pan with a weighted brick or cast-iron lid. Meanwhile, the chipotle cabbage is fried and braised to accompany the chicken.

The recipe recommends using a fire brick in the oven for better heat resistance, but a cast-iron lid can also be used if a suitable brick is not available. Interested cooks can find more recipes like this in the book “John & Lisa’s Kitchen” by John Torode and Lisa Faulkner.
